Using the allowed action set as "Map orphan account" allows the user to manually map the orphan account to the correct user identity and it also leaves the audit trail to follow it that who performed the operation and at what time.

Issue: Once you again run the analytics the old audit data of who had performed the orphan account mapping at what time doesn't get reflected because now the old user is not an orphan account.

How to retain the data of who performed the orphan account mapping at what time for which account as part of audit evidence?

You can enable archival for report and from old report history you can find audit history
