Hello Everyone,
We have a scenario where customer wants their Service desk to be able to delegate or assign pending approvals that is for instance with a manager and not being approved due to the manager being out of the office and obviously not having set up a delegate in Saviynt.
How would one be able to achieve this?

Please try using "custom assignment" in workflow : A custom assignment handler box to leverage this feature. You can pass on the user name or user group name in custom assignment handler, whom you plan to select as an approver for this particular step in the workflow.
So once the time limit set for Managers approval is over, you can add the custom assignment for next level.
Or users with Role_Admin or any SAV Role which has required access to take the action on behalf of Manager.
In SAV Role try adding following config
Use case :
Allow approvers to reassign the open requests to another user

Thanks so much for your reply.
Though this is something that can be used possibly as workaround, is there no manual method to achieve this in Saviynt possibly from Pending Approvals or similar?

You can enable Allow Changing Approvers on admin SAV Role which will allow admins to redirect the approval to another person
